About The Roast:
This roast is named for the UNESCO World Heritage site of Lalibela where 11 churches are carved into the ground from rock. In the 12th century, under the reign of King Lalibela, these Christian churches were a symbolic pilgrimage site that represented Jerusalem, especially since the trek to Jerusalem from Ethiopia was considered dangerous for many pilgrims back then.
Ethiopia is one of the oldest Christian countries. The most famous of the Lalibela churches is the Church of St. George, which is a multi-level building shaped like a cross and said to represent Noah’s Ark.
